Chadwick’s to reclaim the restaurants
stellar food ranking
Chef Gustafson has
redesigned the menus ,adding a blend of new American trendy, with the
classics. his style is French technique with global ingredients,
interpreted in a creative fashion. you will see hints of neuvo latino , pacific
rim, Italian/Mediterranean to classic chop house
and of course French bistro its all there from a Spanish lobster quesadilla to
asian inspired tuna tartar, Belgian influenced moule et frites to tango tempura
shrimp with sweet chili dip, to
mamma s chicken meat ball sliders .
His award winning former restaurants, Ristorante Delfina, in
Seaford and later, Delfinas restaurant and bar in Wantagh, consistently
raved reviewers ,diners and culinary competitions alike for 10 years. Gustafson
has won awards and has competed in some of the most prestigious culinary
competitions on long island for the
last 22 years
Since returning Chadwicks
has garnered a top ten for lunch award from opentable.com
And a 22 Zagat rating sure
to improve
-Prior to a stellar four year run at
Chadwick’s from 2003 to 2007 he took on the challenge of corporate Executive
chef for food service giant Whitsons
food service, where, in addition to concept development and recipe design, he
developed the menus and produced the food
for the 9/11 relief workers food program at ground zero.
-Opportunity called again in
2007 for the chance to run the
kitchens of nautical cruise lines and later on the
mill pond country club.
-An early highlight
in chef Gustafson’s career came in 1985 when he became the executive chef
of Francesco’s restaurant in Bethpage,ny
where he toiled successfully for more than six years , at that time, he
was widely considered one of the youngest Executive Chefs on long island. He was
twenty years old and running the
kitchen of one of the busiest high
profile restaurants of that era.
